PokerTH uses the default route to connect to the internet server. If you wish to use a different network device, you should consider to reconfigure your routing options. For example you can set up a host route specifically for the PokerTH server using the "route" command.
Anyway if you have two internet connections, what's the problem if PokerTH uses the default one? If you want to share the load between the two, you can set up load balancing.
