I think all the cards that are and will be in play during a hand are determined (or picked or generated, call it what you like) before the first bet is made. No matter how good (or bad) the randomization algorithm is, it's not programmed to favour anyone anyway, it does not depend on information about any bet or on the perceived strength of any player's hand. It has been discussed a few times on the forum, if you like I can look up some threads.
The AI might be a bit predictable in its actions sometimes, you may have a point there. That was also discussed a couple of times on this forum.
There is an extremely high likelihood (about 70-80%) of the last card being an Ace, if you have gone all-in before you see the flop.
Some might say that this, even if it's true, is a good thing because it means that people who do an all-in pre-flop with mediocre cards (lots of complaining about that) will lose more often to better hands
